Traditional Cretan Raki
Raki is the traditional drink of Cretans. The production process is a special procedure for Cretans and combined with fun. The production area is always properly configured so it can accommodate dozens of people involved in the fine production, with plenty of food, wine, songs, music, and of course fresh raki.
Good raki to make want skilled people, knowledge and much enthusiasm. Very important is the raw material. To produce raki from red or white grapes, after we get the grape, put in barrels the fruits to be fermented for about 30 days, with some grape.
After fermentation comes the process of production. In special, copper cauldrons put some spiny plants on the bottom of the cauldron, and then add the twigs with raisins and the grape. Close the pot tightly and light fire with wood, terms relevant to the quality and taste of raki. After reaching the boiling in cauldron, a little less than 100 degrees begins the distillation from specially equipped facility.
The first raki dripping (Protoraki) is not drinkable because of the high alcohol content, and very often used instead of alcohol to colds. After a few minutes we remove the Protoraki, take the raki for drinking, but in the end, the produced raki is only used for mixing with Protoraki because of the low-alcohol.
